    1. I like them only if they are roasted, in which case I love them. Not baked or mashed. Never with marshmallows.

      To roast: Peel & cut into rounds 1/2″ thick. Toss with olive oil and salt. Put on parchment paper on cookie sheet in one layer. Cover tightly with foil.

      Place in COLD oven. Turn on heat to 425. Roast for 30 minutes. Remove foil and roast for 15 minutes. Turn over, and roast for 15 more minutes. Wolf them down.

    From your garden?!?! This is wonderful!! And the recipe makes me want to go get some sweet potatoes right now, and get ’em in the oven.
